1Heat a drizzle of oil in a large pan over medium-high heat. Add prosciutto slices in a single layer; sear until browned and crispy, 2-3 minutes per side (you may need to work in batches). TIP: Press down on prosciutto with a spatula for even crisping. If prosciutto starts to crisp too quickly, reduce heat to medium.prosciutto: 4 oz -
2Turn off heat; transfer to a paper-towel-lined plate. Wipe out pan. -
3While prosciutto cooks, wash and dry produce. -
4Halve, peel, and mince half the shallot (all for 4 servings). Halve grape tomatoes .shallot: 1 unit, grape tomatoes: 8 oz -
5In a large bowl , whisk together mayonnaise , Dijon mustard , red wine vinegar , ½ tsp sugar, and a drizzle of olive oil (1 tsp sugar and a large drizzle of olive oil for 4).mayonnaise: 4 tbsp, Dijon mustard: 4 tsp, red wine vinegar: 3.333 tbsp -
6Stir in shallot; set aside to marinate. -
7Massage Microwavable grain blend in package to break up grains; partially open package. Microwave until warmed through, ⏱️ 2 minutes .Microwavable grain blend: 2 unit

8Spread grain blend out on a plate to cool.

9Pat Bavette steak dry with paper towels; season all over with dried oregano , salt, and pepper.Bavette steak: 20 oz, dried oregano: 1 tsp

10Heat a drizzle of oil in pan used for prosciutto over medium-high heat. Add steak; cook until browned and cooked through, 5-7 minutes per side. Turn off heat; transfer to a cutting board to rest.

11While steak cooks, roughly chop prosciutto.

12To bowl with dressing, add tomatoes, grain blend, arugula , half the prosciutto, and half the Parmesan cheese . Toss to combine.arugula: 4 oz, Parmesan cheese: 6 tbsp

13Taste and season with salt and pepper if desired.

14Slice steak crosswise.

15Divide salad between bowls. Top with steak, remaining prosciutto, and remaining Parmesan. Serve.
